Our Owners are fermentation and health enthusiasts who had a dream to create an exclusively vegan restaurant where vegan dishes are the star and not just an option on the menu.

One of the best Polish Chefs, his work stands out because of his true love to Polish cuisine. He loves to experiment with traditional dishes and serves them with an unconventional twist.
His dishes prove that plant based cuisine can be elegant, unexpected and very tasty.
Born and raised in Ukraine – our very own Chef of Zakwasownia. Her journey as a Chef started in Kiev. Then moving to Poland, she developed her skills under the supervision of Marcin Popielarz, in the famous restaurant „Bialy Krolik”.
She loves the challenge of creating vegan versions of well known, traditional dishes and loves nothing more than watching the expressions of surprise and bliss on the faces of our guests.
Our restaurant manager is native to Gdansk and a student of sociology. Her priorities are always our guests and a creating a good atmosphere. She has spent the last 9 years working in several restaurants across London.
Her hobbies are film photography and handpoke tattoos. Interested in climate change, and the environment, she made the decision to stop eating meat 2 years ago and has never looked back.
